Fresh Strawberry Salad

Nothing beats a nice refreshing salad made from the bounty of Ontario fresh produce this time of year. Check out your local farmers market to find local products and get creative with your salad! One of my favourites is a strawberry and mixed green salad served with balsamic dressing.

Strawberry Salad with Balsamic Dressing

Prep time: 10 minutes
Cooking time: none
Yield: 4 starter salads


8 cups (1 L) mixed greens
1/2 cup (125 mL) sliced red onion
1 cups (250 mL) sliced strawberries
1/2 cup (125 mL) crumbled feta cheese
Balsamic dressing
2 tbsp (30 mL) canola oil
1/4 cup (60 mL) balsamic vinegar
1/4 tsp (1 mL) mustard
1/2 tsp (3 mL) honey
salt and fresh ground black pepper to taste

Cooking directions

  1. Salad: In four separate serving bowls, layer the salad as follows: mixed greens, onion, strawberries. Sprinkle feta over each bowl.
  2.  Balsamic dressing: In a small bowl, whisk olive oil, vinegar, mustard, honey, salt and pepper until well combined. Serve salads with dressing on the side.
